Buddha bowls are so appealing because there are no rules. I was inspired by my love for sizzling chicken fajitas. Instead of eating a tortilla I put the chicken and veggies on a bed of fluffy quinoa. So, that’s how this buddha bowl was born.
Well, I did it guys. I made my first smoothie bowl, and it was a chocolatey success. Zucchinis keep popping up in smoothies, and I’ve been hesitating, but I finally gave in. The end result is a creamy treat that has a lot of fiber and even more flavor.
This cucumber salad is so fresh and easy to make. There are less than 10 ingredients and the hardest part is cutting the cucumbers and onions nice and thin. It’s a great side to have with grilled chicken or fish.
