A fall inspired vegan smoothie bowl with warm pumpkin flavors is a great way to start the day. There is no added sugar, and it’s super healthy thanks to the pumpkin, zucchini and avocado.
If you want to build some muscle this smoothie has vanilla protein powder, plus it keeps you full longer. The smoothie is sandwiched between a delicious vanilla crumble made with nut butter.
OK, let’s get started.
For the crumble, put 4 tbsp. vanilla protein powder, 1 heaping tbsp. cashew butter and 1 tbsp. vanilla almond milk in a bowl. Combine using a fork until it’s crumbly.
Put half in a bowl, and press down so the bottom is totally covered.
Now for the smoothie. Put almond milk, zucchini, pumpkin puree, pumpkin pie spice, cinnamon, salt, Stevia, avocado, vanilla extract, and plant-based vanilla protein powder in a magic bullet or blender.
Pour into bowl, and top with the rest of the crumble.
