Vegetable Pumpkin Fried Rice

If you’re looking for an easy vegetarian dinner it doesn’t get easier or tastier than this fried rice. It’s loaded up with fall favorites like zucchini and pumpkin, and to make life easy, everything is cooked in one skillet. It takes less than 30 minutes to make, perfect for those busy nights.

It was late, I just worked out and I didn’t feel like cooking a big fancy meal. Plus, I needed to go food shopping so I raided my fridge and found a zucchini, red onion, eggs and leftover rice. Sometimes those are the best meals…no plan, just throw a bunch of things together and see what happens.

It doesn’t always work out, but in this case it came out way better than I thought. I fine tuned it after I finally went food shopping and came up with a really delicious fall-inspired fried rice dish.

Trying new things is something that gets me exited whether it’s a new recipe or something active. I tried out a new yoga class with my Mom, yin yoga. I’m fairly new to yoga and never knew how to quiet my mind.

I was always into pushing my body to its max and going until I was exhausted. I have to say, that yoga has helped me focus better and set positive intentions. Also, I’m so much more flexible than I ever was.

I tried out a yin yoga class which has basic poses interspersed with long resting poses. The yogi came around and stretched out our spines and she filled our minds with really positive words.

Her voice had such a soothing tone that it just relaxed me and filled the room with calm. She could be telling me to go take out the garbage and I would be instantly calm haha. Also, she kept telling us to build our landscape, with the mat and other props. But to me, this goes deeper. I absolutely believe we can build our landscape in life and fill it with beauty and happiness, and most importantly, love.

I just wanted to put out there that trying new things has really made me grow. You never know what one little change will bring and what path it will lead down. This recipe is a good example of trying new things.

OK, let’s get started.

Make Ready Rice in microwave.

Put olive oil in pan on medium heat. Chop shallot and zucchini, and add to pan. Add seasonings and stir.

vegetable-pumpkin-fried-rice-01When they start to soften add cooked rice, beans, and pumpkin puree. Stir and cook until heated through.

vegetable-pumpkin-fried-rice-03Crack four (organic, free range) eggs into a bowl and scramble. Or you can use one cup of egg whites.

vegetable-pumpkin-fried-rice-04Add to pan and mix together. Keep stirring until the eggs are cooked.

vegetable-pumpkin-fried-rice-05If you don’t stir enough then you’ll just have scrambled eggs with rice, but if you keep stirring it then it gets fluffy and coats everything in a creamy egginess.

Vegetable Pumpkin Fried Rice

Time: 27 minutes
Servings: 4

Ingredients

  • 2 Cups Cooked Rice
  • 1 Zucchini
  • 1/4 Red Onion
  • 1 tbsp. Parsley
  • Salt to Taste
  • Pepper to Taste
  • 1/4 tsp. Cayenne Pepper
  • 2 tbsp. Olive Oil
  • 3 tbsp. Pumpkin Puree
  • 4 eggs or 1 Cup Egg Whites
  • 1/2 Cup Black Beans

Instructions

  1. Make Ready Rice in microwave, or make regular rice on the stove top (times will vary since I used Ready Rice in this recipe).
  2. Put olive oil in pan on medium heat.
  3. Chop shallot and zucchini, and add to pan.
  4. Add seasonings and stir.
  5. When they start to soften add cooked rice, beans, and pumpkin puree. Stir and cook until heated through.
  6. Crack four (organic, free range) eggs into a bowl and scramble. Or you can use one cup of egg whites.
  7. Add to pan, and mix together. Keep stirring until the eggs are cooked and everything is coated with creamy eggs.

Don’t eat eggs? Substitute them for cheese (change the measurement).

Do you like spice? Add crushed red pepper flakes.
