Pumpkin Oatmeal with Vanilla Crumble

If you’re looking for a tasty fall-inspired breakfast you’ve come to the right place. This healthy pumpkin oatmeal is reminiscent of pumpkin pie with those comforting fall spices. Also, the sweet crumble dances on top and tastes like pumpkin pie crust

There’s no sugar added, just Stevia, a plant based sweetener that packs a punch. Another thing I love about this recipe is that it smells so good, it makes my whole kitchen smell like pumpkin pie. I don’t know why, but there’s something so comforting about that smell.

OK, let’s get started.

Add almond milk, water, pumpkin pie spice, cinnamon, salt, Stevia and vanilla extract to a pot on medium heat. After 5 minutes, add the oats, pumpkin puree, and cashew butter to the pot. Stir frequently for about 10-13 minutes.

pumpkin-oatmeal-with-vanilla-crumble-01Now for the crumble. Put vanilla protein powder, cashew butter and almond milk in a bowl. Use a fork to mix it together. When it has a crumbly texture it’s done.

The oatmeal is done when it gets nice and creamy.

PUMPKIN OATMEAL WITH VANILLA CRUMBLE

Ingredients

Oatmeal

  • 1/2 Cup Oats
  • 1/2 Cup Almond Milk
  • 1/2 Cup Water
  • 3 tbsp. Pumpkin Puree
  • 1/2 tsp. Pumpkin Pie Spice
  • 1/4 tsp. Cinnamon
  • Pinch of Salt
  • 1/2 tsp. Vanilla
  • 2 tsp. Stevia
  • 1/2 tbsp. Cashew Butter

Crumble

  • 3 tsp. Vanilla Protein Powder
  • 1 tsp. Cashew Butter
  • 1 tsp. Almond Milk

Instructions

  1. Add almond milk, water, pumpkin pie spice, cinnamon, salt, Stevia and vanilla extract to a pot on medium heat.

Do you want it sweeter? Add some honey or maple syrup.

Don’t have vanilla protein powder? Use flour and vanilla extract instead.
