Roasted Brussel Sprouts and Cranberries

I know you probably pass over the bowl of brussel sprouts at your family dinners. Trust me, brussel sprouts are delicious if you cook them the right way and add seasoning. No one will pass this side dish at your next get together.

Brussel sprouts are super healthy and give your body protein for muscle growth as well as vitamin C to strengthen your immune system. Not only are they good for you, but they have this amazing buttery flavor. When you roast them in the oven the little outside pieces fall off and get crispy, like a little chip.

The cranberries are sweet, and the cashews are crunchy which is a nice opposition from the soft, buttery brussel sprouts. Not sold on them yet? I understand, it took me a while also.

OK, let’s get started.

Preheat oven to 400° F (204° C).

Cut off ends of brussel sprouts, and cut them in half.

Roughly chop the cashews and add to the baking sheet.

roasted-brussel-sprouts-and-cranberries-03Drizzle extra virgin olive oil on top. Sprinkle with salt, pepper and garlic powder. Mix everything until evenly coated.

Put in the oven for 40 minutes. Flip halfway through. Once they get golden brown then you know they’re done.

ROASTED BRUSSEL SPROUTS AND CRANBERRIES

Total Time: 50 minutes
Servings: 4-6

Ingredients

  • 24 oz. Brussel Sprouts
  • 1/4 Cup Cranberries
  • 1/4 Cup Cashews
  • 2 tbsp. Extra Virgin Olive Oil
  • 1 tsp. Garlic Powder
  • Salt to Taste
  • Pepper to Taste

Instructions

  1. Preheat oven to 400° F (204° C).
  2. Cut off ends of 24 oz. of brussel sprouts, and cut them in half.
  3. Put them on the baking sheet.
  4. Roughly chop 1/4 cup of cashews and add to the baking sheet.
  5. Next, add 1/4 cup cranberries.
  6. Drizzle 2 tbsp. extra virgin olive oil on top.
  7. Sprinkle with salt to taste, pepper to taste and 1 tsp. garlic powder.
  8. Mix everything until evenly coated.
  9. Put in the oven for 40 minutes. Flip halfway through.
  10. Once they get golden brown then you know they’re done.

Do you want a richer buttery flavor? Use coconut oil instead of olive oil. Just microwave it first so it’s liquefied.

Don’t like cranberries? Substitute them for raisins or any other dried fruit.
