Bean and Corn Patty Pancake


Who says a pancake has to be sweet? This pancake patty recipe is made of beans and corn. It’s so healthy and filling, you won’t even miss the syrup.

I love black bean burgers, but something different is in order. Enter the bean and corn patty. Each patty is cooked in olive oil until the outside is nice and crispy. The chili powder adds a little fire and it’s nicely balanced with the sweet corn.

It’s as thin as a pancake, but much heartier.

I like to fuel my body with healthy food and my mind with healthy words. I have been having mixed emotions lately about being single. Most of my friends and family are married, have a partner or have kids.

I’m 34 and I have none of that. I like to do mantras to keep my thoughts positive or to acknowledge a dream. My latest mantra is, “I welcome a healthy loving relationship.” At first, I pictured myself with a guy but while in yoga, a different image came to my mind.

It suddenly came to me! I want a healthy loving relationship with myself first and foremost. So, I’m doing things I love and spending time with people who I love. To all of you who find yourself single in a sea of couples, I know how you feel. Let’s embrace it, and live a life we love.

Anyway, let’s get back to cooking this delicious bean patty.

OK, let’s get started.

Put a pan on medium heat and add oil.

Drain beans and put in a bowl. Mash them up with a potato masher. I like them to be a little chunky.

Cut corn off the cob and add to bowl.

bean-and-corn-patty-pancake-01Add 1 egg. Grate 1/2 shallot into the bowl. Add salt, pepper, chili powder, parmesan cheese and almond flour. Mix everything until it’s combined.

bean-and-corn-patty-pancake-02Make thin patties and put them in the pan. Cook them for about 2-3 minutes per side.

bean-and-corn-patty-pancake-05These patties go really well with eggs in the morning. The yolk from the eggs seeps into the beans for a really creamy and perfect bite.

Also, you can put a patty on top of a kale salad or have it for a mid-morning snack.



Time: 45 minutes
Servings: 8-10


  • 2 Cans Black Beans
  • 1/2 Corn on the Cob
  • 1 Egg
  • 1/2 Grated Shallot
  • 1 tbsp. Parmesan Cheese
  • 6 tbsp. Almond Flour
  • Salt to Taste
  • Pepper to Taste
  • 1/2 tsp. Chili Powder
  • 3 tbsp. Olive Oil


  1. Put a pan on medium heat and add 1 tbsp. olive oil.
  2. Drain 2 cans of beans and put in a bowl.
  3. Mash them up with a potato masher.
  4. Cut corn off 1/2 cob and add to bowl.
  5. Add 1 egg.
  6. Grate 1/2 shallot into the bowl.
  7. Add salt, pepper, 1/2 tsp. chili powder, 1 tbsp parmesan cheese and 6 tbsp. almond flour.
  8. Mix everything until it’s combined.
  9. Make thin patties and put them in the pan.
  10. Cook them until they’re browned, about 2-3 minutes per side.
  11. Add more olive oil to the pan for each batch.

Do you like seasoned breadcrumbs? Use those instead of almond flour.

Do you like spice? Add jalapeno peppers to the mix.
