This is my go-to breakfast in the morning, a big protein pancake. This soft and fluffy pancake is sweetened with cinnamon and the natural plant-based sweetener, Stevia. It’s creamy topping is guilt-free, you won’t miss the syrup, trust me.
I recently moved into a new apartment with my Sister. It’s a nice two bedroom apartment with a bright and airy kitchen. It has a really homey feel. We brought the couch in through the backdoor only to realize it didn’t fit, which made us have to haul it out and squeeze through the front door. Even though it’s a bit stressful, it’s coming together nicely, and we’re laughing along the way.
It’s always weird to be in a new place. I have to find a new gym, supermarket, gas station and so on. When I feel a little out of place, cooking food keeps me grounded. This protein pancake recipe is a bit of familiarity in an unfamiliar environment.
Let’s make the pancake.
Spray pan with non-stick cooking spray, and put it on medium-low heat.
Put protein powder, almond flour, egg whites, almond milk, baking powder, Himalayan pink salt, cinnamon and Stevia in a bowl. Whisk until it’s smooth.
Pour into pan.
It won’t bubble like regular pancakes. I like to shake the pan a bit to see if the top is still wet. Once it starts to get cooked on top with just a little wetness, then it’s time to flip. Cook for another minute or two.
Put cashew butter, peanut butter or almond butter (whatever is your favorite), non-fat plain Greek yogurt, and a splash of vanilla almond milk in a small bowl. Stir it up.

Are you a chocolate lover? Use chocolate protein powder instead, and add a little unsweetened cocoa powder.
Are you lactose intolerant? Take out the Greek yogurt in the icing, it’s still just as creamy and delicious.
