Spicy Avocado Toast and Eggs

This breakfast is a departure from your regular run-of-the-mill eggs and toast. The star of the show is a creamy and spicy avocado spread that’s smothered on the toast. It’s so easy to make, and it takes breakfast to the next level.

I have to admit to having the same thing for breakfast every morning. Although, I love protein pancakes, sometimes you have to switch it up.

Speaking of switching it up, my family and I recently went on a vacation on a lake. We rented a little house right on the water, and I loved watching the sunset every night.

When the sun light slowly disappears and the night starts to take over it’s like being on the verge of two worlds. It feels like I’m balanced between the past and the future, and it’s my most grounded time.

As much as I loved watching the sunset, I also loved the food. My sister made guacamole which was creamy and a little spicy. Her boyfriend spread the guac on toast in the morning and topped it with eggs and a tomato. It inspired me to make this recipe. It’s simple, and so delicious. Perfect for breakfast or brunch with your family and friends.

OK, let’s get started.

Put 2 pans on medium/low heat and spray with cooking spray.

Put bread in toaster. I like to use a toaster oven so I can toast 4 pieces at once, this is great if you’re cooking for a big group of people.

Crack eggs into one pan. I use organic brown eggs from free range chickens. Yes, they’re more expensive, but I like to know that the eggs don’t have added hormones, and the chickens are able to roam around outside. I flip mine after about 2 minutes, and cook until the egg white isn’t runny, but not too much because I like a runny yolk.

Slice up 4 grape tomatoes or 1/2 large tomato. Put slices in other pan. Flip when they get soft, about 1-2 minutes.

Get a bowl, and add avocado, jalapeno pepper, 1/2 garlic clove, non-fat Greek yogurt, salt and pepper. Use a citrus squeezer to squeeze the juice from half of a lemon in to the bowl. Use a fork to break up the avocado, and mix everything together.

spicy-avocado-toast-and-eggs-02Put the toast on a plate, slather with the avocado dip. Place an egg on top, and add the tomato slices. Sprinkle with salt, pepper and parsley.

SPICY AVOCADO TOAST AND EGGS

Time: 20 minutes
Servings: 2-4

Ingredients

  • 4 Pieces Whole Wheat Bread
  • 1 Avocado
  • 1 Jalapeno
  • 1/2 Garlic Clove
  • 1 tbsp. Greek Yogurt
  • 4 Eggs
  • 1/2 Tomato or 4 Grape Tomatoes
  • Juice from 1/2 Lemon
  • 1 tbsp. Parsley
  • Salt to Taste
  • Pepper to Taste

Instructions

  1. Put 2 pans on medium/low heat and spray with cooking spray.
  2. Put 4 pieces of bread in toaster.
  3. Crack 4 eggs into one pan. Flip after about 2 minutes.
  4. Slice up 4 grape tomatoes or 1/2 large tomato.
  5. Add them to the other pan. Flip when they get soft, about 1-2 minutes.
  6. Get a bowl, and add avocado, jalapeno pepper, 1/2 garlic clove, non-fat Greek yogurt, lemon juice, salt and pepper. Use a fork to break up the avocado, and mix everything together.
  7. Put the toast on a plate, slather with the avocado dip. Place an egg on top, and add the tomato slices.
  8. Sprinkle with salt, pepper and parsley.

Are you lactose intolerant? Leave out the Greek yogurt, it’s still creamy.

Do you want it sweet? Add mango salsa on top.
