Creamy Chocolate Zucchini Smoothie Bowl

Well, I did it guys. I made my first smoothie bowl, and it was a chocolatey success. Zucchinis keep popping up in smoothies, and I’ve been hesitating, but I finally gave in. The end result is a creamy treat that has a lot of fiber and even more flavor.

As everyone probably knows, I love chocolate and sweets, but I don’t want to eat a lot of sugar. So, I’m always making concoctions in the kitchen that are naturally sweet from fruit, like bananas, or sweetened with plant-based Stevia.

This smoothie bowl creation is a proud moment for me. It’s topped with thick cashew butter, a healthy fat, and buttery coconut flakes dance on top for a little crunch.

There was a nice breeze after work today so I decided to take out my bike, and go for a ride around the neighborhood. While riding, I really tried to focus on the muscles in my body and the way they contract and move.

I’m so grateful for my body, and how strong it is. I will never be a fitness model or a famous athlete, but I can run fast, bike up a hill, climb up a rope and squat til my thighs burn. And that makes me happy…you know what else makes me happy? This chocolate smoothie bowl.

OK, let’s get started.

Put 1 scoop of chocolate protein powder, unsweetened cocao powder, avocado, banana, zucchini (leave the skin on), Himalayan pink salt, almond milk, and Stevia in a blender or Nutri Bullet.

I use a Nutri Bullet, shake around the ingredients and turn it on until it’s nice and smooth. It’s easier to clean than a blender, and you can drink right out of the cup.

Are you consuming less fat? Substitute avocado for non-fat Greek yogurt.

Do you want it creamier? Mix the nut butter into the smoothie instead of putting it on top.
