Creamy Banana Cashew Smoothie

If anyone hasn’t tried cashew butter, do it! Seriously. It’s so creamy and adds such a nutty flavor to this smoothie. This cashew butter smoothie takes less than 5 minutes to make, perfect for a healthy breakfast when you don’t have a lot of time.

It’s important to start your day with a nutritious breakfast. The protein in the cashew butter and yogurt keep you full and the banana has carbs for energy. Stevia is a no-calorie plant-based sweetener, and a little goes a long way.

Let’s make the smoothie.

First, add 1/4 cup of vanilla almond milk to a blender. Then add all the ingredients except the chopped up cashews. Blend until smooth. Sprinkle with cinnamon and chopped cashews. For me, I like my food to taste good, and I really love different textures. The chopped cashews are a great counter to the creamy smoothie.

I’m in the middle of reading Eat Pray Love, I know I’m late in the game. I just love the writing, and when Elizabeth Gilbert is in Italy she’s indulging in food she’s never tried. The food brings people together who she never met and buying food from markets helps her to learn the language. There is emotion in the food as well as incredible flavor and textures. I can absolutely relate to it. The picture below is my delicious smoothie, and I picked some purple flowers that my Mom planted in the garden. I love the little pop of color against the muted earthy tones.

CREAMY BANANA CASHEW SMOOTHIE

Total Time: 5 minutes
Servings: 1

Ingredients

  • 1/4 Cup Vanilla Almond Milk
  • 1/2 Cup Fat Free Greek Yogurt
  • 1/4 Cup Oats
  • 2 1/2 tsp. Stevia
  • 1 tbsp. Cashew Butter
  • 1/2 tsp. Cinnamon
  • 1 Cup Ice
  • 1 Banana
  • 1/4 tsp. Nutmeg
  • 1 tsp. Vanilla
  • 3 Chopped Cashews

Instructions

  1. Add everything to a blender (except the chopped cashews.)
  2. Blend until smooth.
  3. Pour into a glass or travel cup to drink on the way to work.
  4. Sprinkle with cinnamon and chopped cashews.

Are you dairy-free? Substitute yogurt for tofu.

Do you want a thicker smoothie? Use less ice and more yogurt.
