Mediterranean Salad with Zesty Dressing


My sister made this Mediterranean salad, and I had to get the recipe. This no-cook side dish involves chopping and stirring, that’s it. It’s so easy and great to bring to a summer barbecue.

The vegetables soak up all the flavor from the garlicy lemony dressing and it’s an unbelievably healthy salad. The fiber in the chickpeas helps with digestion and cucumbers keep you hydrated, great for those hot summer days. The shallot adds a surprise pop of flavor and the feta cheese has a nice creamy saltiness.

This salad is delicious, nutritious and glamorous. The colorful array is so pleasing to the eye. I believe that what we see affects the whole eating experience, and this salad hits all the right notes.

To start off, rinse and drain the chickpeas and put them in a large bowl. Then cut grape tomatoes in half.

mediterranean-salad-with-zesty-dressing-02Lightly chop black olives. I used to hate black olives, but I can’t believe how tasty they are in this salad. They’re a little meaty, if that makes sense, and they’re great for a manicure :p

mediterranean-salad-with-zesty-dressing-04Sprinkle 1/4 cup of crumbled feta cheese.

Get a bowl or measuring cup. I like to use a measuring cup because it’s easy to pour. Add extra virgin olive oi.

Squeeze the juice from half of a lemon into the measuring cup. If you want to make your life easier, use a handy dandy lemon squeezer. What a difference from trying to squeeze it by hand and catch the lemon seeds!

mediterranean-salad-with-zesty-dressing-06Add red wine vinegar, minced garlic, cumin, salt, pepper and agave nectar.

Mix until everything is evenly distributed.

Drizzle it on top of the salad, and mix it up. It even tastes good a few days later after everything has been soaking in the dressing.

  • 2 Cans Chickpeas
  • 1 Pint Grape Tomatoes
  • 1/2 Orange Pepper
  • 1/2 Yellow Pepper
  • 1 Shallot
  • 3/4 Can Black Olives
  • 1/2 Cucumber
  • 1/4 Cup Parsley
  • 1/2 Cup Crumbled Feta Cheese


  • 4 tbsp. Extra Virgin Olive Oil
  • 1 tbsp. Lemon Juice
  • 1 tbsp. Red Wine Vinegar
  • 1 tbsp. Agave Nectar
  • 1 Small Garlic Clove, Minced
  • 1/4 tsp. Cumin
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper


  1. Rinse and drain the chickpeas and put them in a large bowl.
  2. Then cut grape tomatoes in half.
  3. Dice peppers and shallot.
  4. Lightly chop black olives.
  5. Core cucumber and chop.
  6. Chop parsley.
  7. Measure 1/4 cup of feta cheese.
  8. Add everything to the bowl.
  9. Mince garlic and put in measuring cup.
  10. Add 4 tbsp. extra virgin olive oil, 1 tbsp. lemon juice, 1 tbsp. red wine vinegar, 1 tbsp. agave nectar, 1/4 tsp. cumin, 1/2 tsp. salt, and 1/2 tsp. pepper to the measuring cup.
  11. Stir until mixed well.
  12. Drizzle on top of salad.
  13. Stir and enjoy 🙂

Are you dairy free? Substitute the feta for tofu.

Don’t like chickpeas? Use black beans instead.
